Vegan Tzatziki Sauce

Tzatziki!! Yes yes yes yes! One of my favorite sauces EVER! Recreated right vegan style with no dairy in sight. ENJOY!!

INGREDIENTS
:
  • 1 cup cashews, soaked, drained and rinsed
  • 3 cloves garlic minced
  • juice of two lemons
  • 2 Tbsp tahini
  • 1 large cucumber
  • 1 Tbsp chopped fresh parsley OR 2 Tbsp dried
  • 1 Tbsp chopped fresh dill OR 2 Tbsp dried
  • 1 cup water

DIRECTIONS:
  1. Chop the cucumbers into small pieces.
  2. In a blend or food processor, combine the cashews, tahini, minced garlic, lemon juice, and water. Blend or process until super smooth and creamy. If it's too thick, add water 1 tablespoon at a time until you reach your desired consistency.
  3. Pour into a medium bowl and stir in the herbs and chopped cucumbers. Serve immediately or keep refrigerated in an airtight container for 2-3 days.
