Vegan French Onion Dip

​I don't know about you but when I was younger I would go to town on french onion dip and crinkle chips! Like eat the whole container on a Tuesday night. Well it hasn't been years since doing anything like that and I DON"T recommend it haha! However you now can have the delicious flavor of that dip made out of plants! I hope you enjoy this as much as we do!

​Ingredients:
  • 1 large yellow onion, diced
  • 1/4 cup low sodium veggie broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups raw cashews (soaked 3 hours to overnight)
  • 2 tbsp lemon juice
  • 2 tsp dried dill
  • 1 tsp salt
  • 3/4 cup coconut milk
  • 2 Tbsp dried chives

Directions:
  1. Heat the veggie broth in a large pan on medium-high heat. Add in the diced onions and stir for a 1 minute. 
  2. Turn the heat down to medium low, add the onion powder, garlic powder, parsley, salt, and pepper, and stir to combine. Allow the onions to cook about 15 minutes, stirring frequently so the onions don't burn. If the onions start to stick, add 1-2 Tbsp of broth.
  3. Make the cashew cream by draining and rinsing the soaked cashews.
  4. In a high speed blender or food processor, place the cashews, lemon juice, dill, salt and coconut milk. Blend until it is smooth and creamy, scraping down the sides of the blender.
  5. When the onions are nicely browned and soft, turn off the heat and add in the cashew mixture to the pan. 
  6. ​Mix in the dried chives.
  7. Transfer to a glass storage container and allow to cool, then put in the refrigerator to chill.
  8. Serve chilled with potato wedges, chips, raw veggies, in a GF tortilla roll up or g GF crackers!

I love this recipe and I'm really looking forward to making it! We are about 6 months into a full transition of our diet so forgive my question but...where do you get 15 cups of cashews? I have wanted to start using cashew cream and making different cashew sauces but our grocery store just carries tiny packages. Thanks for any tips!! :)
