Strawberry Coconut Truffles

These are like little strawberry cheesecake bites covered in chocolate. So. Good. Made with all clean ingredients you will have a hard time NOT overindulging!
Ingredients:
Creme:
  • 1 cup Coconut Butter
  • 1.5 cups Strawberries
  • 2 Tbsp Maple Syrup or Raw Honey
  • 2 Tbsp Chocolate chips
Glaze:
  • 1 cup Chocolate chips ( I use Enjoy Life or Equal Exchange vegan chips)
  • 3 Tbsp almond milk


Directions:
  1. In a food processor, mix all the filling ingredients except the chocolate chips together very well.
  2. When it is nice and smooth, scoop it all out and put in a small bowl. Add chocolate chips.
  3. Using a spoon, drop small balls of the filling onto a lined baking sheet.
  4. Put the baking sheet in the freezer to firm up.
  5. While the balls are firming up, melt the chocolate.
  6. Using a double boiler method*, melt the chocolate chips and the milk.
  7. Stir constantly until the chocolate is melted and the mixture is smooth. Remove from heat.
  8. Take the sheet out of the freezer and roll the balls into the chocolate very carefully, shaking excess chocolate off and place them back onto the lined baking sheet.
  9. Stick the finished balls back in the freezer to get hard. Store in the freezer and enjoy!
