Socca Pizza

Pizza is probably one of my favorite things to eat. The comfort of bread, the warmth, the tomato goodness, and all the veggies you can pack in there! When you try to eat clean getting to eat pizza can get tricky and sometimes even those gluten-free crusts are full of additional chemicals and ingredients we shouldn’t be eating. This one is so easy and you only need a couple of ingredients! Socca is basically a crust that is just from chickpea flour, water, oil and salt. But you can add any spices you like into the mix! It is a wet batter so you will need a pan with higher sides so it is not spilling into the oven. You can do any toppings you like or even make it into a dessert pizza! Most Socca recipes call for more oil but I only used a little to keep it lighter and lower fat. It should turn out like a soft thin crust with crispy edges. The perfect mix for that pizza craving!
Ingredients:
  • 2 Tbsp olive oil, divided or parchment paper
  • 1 cup chickpea/garbanzo bean flour, I use Bob’s Red Mill
  • 1 cup water
  • ½ tsp garlic powder
  • 1/8 tsp oregano
  • 1/8 tsp basil
  • 1/8 tsp black pepper
  • 1/4 tsp sea salt or to taste
Toppings:
  • 1/2 can pizza sauce, I use Muir Glen Organic brand
  • Vegan cheese, optional (I used Daiya)
  • Any veggies you like (I used olives, onions, bell peppers, spinach, mushrooms)
  • Hemp seeds
  • Vegan parmesan
  • Hot sauce
Directions:
  1. Preheat the oven to 450F baking sheet, I have a 9×13 in, with 1 Tbsp of the oil or use parchment paper to line the sheet.
  2. In a medium bowl, mix together 1 Tbsp of oil, chickpea flour, water and spices. Whisk until completely smooth. It will be a wet batter.
  3. Pour the batter into the oiled or lined baking sheet and tilt to make sure the tray is evenly coated.
  4. Cook for 10 -12 minutes until golden and slightly crisp around the edges.
  5. If you desire, you can sauté the veggies while the crust cooks. In a little coconut oil, add veggies of choice with a little sea salt and sauté on medium high until desired softness occurs. Remove from heat.
  6. Remove the crust from the oven to add toppings.
  7. Spread the pizza sauce on the crust and start layering pizza. Sprinkle your vegan cheese and all your veggies on.
  8. Bake again for 7-10 minutes. You want the crust to be browned and crispy!
  9. Remove from the oven and cut into squares. Top with vegan parm, hemp seeds and hot sauce or whatever add ons you desire!
