Simple Healing Potato Soup

As simple as roasted potatoes and veggie broth! Add a few spices and boom, healing bowl of yumminess!

Ingredients:
  • 3 yellow potatoes
  • 3 red potatoes
  • 1/2 red onion
  • 2 tsp dried rosemary, chopped
  • 1 tsp turmeric
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 QT box organic veggie broth OR homemade if you have it! ( I used Engine 2 Plant Strong)

Directions:
Preheat oven to 375.
  1. Line baking sheet with parchment paper.
  2. Wash and cube the potatoes and add to baking sheet.
  3. Chop the onion and sprinkle on top of the potatoes and sprinkle with spices.
  4. Using your hands, massage all the spices into the potatoes.
  5. Spread them out evenly on the sheet and put into the oven.
  6. Bake for approx 30-40 minutes or until barely golden brown and soft. Flipping half way through.
  7. Pour the veggie broth into a pot and turn on medium.
  8. Once hot, add the potatoes and allow to simmer for about 7 minutes. Remove from the heat, add salt if needed and serve.
