Raw Veggie Wrap

A little change from the regular wraps full of grains, this one uses RAW coconut wraps that are made with just coconuts! Honestly you can do ANY combo of your favorite veggies! This is just what I had on hand.

​Ingredients:
  • Butter lettuce
  • Red leaf lettuce
  • Roma tomato
  • Green onion
  • Pre-made cilantro lime cauliflower rice*
  • Bell peppers, any color
  • Avocado
  • Sprouts or Micro greens
  • Raw Coconut wraps
  • Optional: Hummus, mustard, hot sauce, salsa, squeeze of lemon/lime juice etc.
*I usually make a large batch at the beginning of the week to have for the wraps.

Directions:
  1. Lay the coconut wrap out flat on your plate.
  2. Start layering your wrap in anyway you like. I start with one type of lettuce, build on that and top it with the other lettuce to make sure everything stays inside.
  3. If you are using any spreads or a squeeze of lemon/lime juice, put that in the middle so it doesn’t make a mess.
  4. Roll as tight as you can, pushing all the veggies inside as best as possible.
  5. I find if I add a little lemon juice or water to the ends it helps to keep it sealed.
  6. Cut in half and enjoy!
