Raw Pad Thai with Almond Sauce

Sometimes we really just want a comforting noodle dish with a spicy sauce! And sometimes we also really want something refreshing and cool! In comes the Raw Pad Thai to give your mouth a party and your belly will thank you for all the nourishing, healing veggies! It is pretty simple, takes about 15 minutes and tastes divine! You can also add in spiralized zucchini & carrots if you wish! Swap out the almond butter for another nut butter you love!
Ingredients:
For the Almond Sauce:
  • 3 Tbsp raw almond butter
  • 1 lime, juiced
  • 1 Tbsp coconut aminos
  • 1/2 tsp coconut nectar or maple syrup
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1-2 teaspoons sriracha (optional, can sub a pinch of cayenne)
  • Pinch of salt
  • water to thin out

For the Veggies:
  • 1 large spiralized English cucumber
  • 1/2 cup thinly sliced red cabbage
  • 1/2 cup chopped broccoli
  • 1 cup thinly sliced sweet peppers, colors of choice
  • 1 green onion, chopped (for topping)
  • Optional : onion flakes, red pepper flakes, cilantro, almonds
Directions:
  1. Spiralize and thinly slice all veggies, throw in a large bowl & toss.
  2. Make the sauce: combine all the ingredients besides the water in a small bowl with a fork & blend until smooth. Taste and add more salt or other spices if needed. Thin the sauce out with water until it is still thick but can be poured onto the veggies.
  3. In the veggie bowl, pour the sauce in and toss to coat evenly. Top with green onions. I used onion flakes & red pepper flakes as well! Enjoy!
