Ratatouille

I never had ratatouille, let alone even knew what it was, until after I saw the PIxar movie! I was so intrigued and needed to make it asap! This gem is DELICIOUS! And yes it can be some work but it is fun to make this all fit and look beautiful. You can use any kind of root veggies that can be cut into rounds and mix it up with some onions and tomatoes too! It's the perfect fall side dish!

Ingredients:

Sauce Mix:
  • 1/4 cup veggie broth
  • 1 Yellow Onion, chopped
  • 4 Garlic Cloves, minced
  • 1/2 Cup of Marinara
  • 1 Tbsp Thyme
  • 1 tsp Real Salt
  • 1 tsp Black Pepper

Ring veggies:*
  • 2 Sweet Potatoes
  • 4 Red Potatoes
  • 2 Red Onions
  • 2 Large Zucchini
  • 1 Red Pepper
  • (Salt and pepper to sprinkle on top)
*you can use any veggies you wish that can be cut into rounds.


Directions:
  1. Preheat the oven to 375*
  2. In a large sauce pan, heat veggie broth. Add the onion and garlic. Let them get aromatic and translucent.
  3. Add the spices and marinara to the pan, combine and turn off the heat.
  4. Spread this mixture on the bottom of a greased baking dish. I used a round 9 inch skillet.
  5. Slice all the veggies with a sharp knife in thin rounds or use a mandolin if you have one. Cut the red pepper into small slices.
  6. Layer the rounds in any order you want starting on the outside. I did zucchini, red onion, sweet potato, red potato. Repeat.
  7. When you have finished assembling these,  leave the center open and fill with rep pepper slices.
  8. Put into the oven for 45 minutes and check. Potatoes will be done when they are soft and golden brown on the edges. Depending on the size of the rings, it may take a little longer.
  9. Remove from the oven when golden brown and allow to cool for 5 minutes.
  10. Smoother with salsa or guacamole or eat as is!
