Quinoa Taco Filling

Ingredients:
  • 1 cup Quinoa
  • 2 cup Veggie Broth (or water)
  • 2 tsp ground cumin
  • 2 tsp ground chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp both sea salt and black pepper

Cashew Cream

Directions:
Preheat oven to 375.
  1. Add quinoa and broth to a pot. Cook on medium heat, covered, until the liquid evaporates and quinoa is fluffy, about 25 minutes.
  2. Remove from heat once it is fully cooked and let it cool a bit.
  3. In a large bowl, add all the spices and quinoa. Mix until fully combined and evenly covered.
  4. Transfer onto an unbleached parchment paper lined baking sheet and put into the oven for about 20-30 minutes. Watch so it doesn’t burn.
  5. Remove from the oven when it is golden brown and crispy.
  6. This can be served on tortillas for tacos, in pasta, on a salad or just as a side dish. The possibilities are endless!
