Quinoa Stuffed Peppers

Ingredients:

  • 1 Cup Quinoa, uncooked
  • 2 Cups of Water
  • 1/4 cup veggie broth
  • 1 Cup of spinach
  • 2 Celery stalks, chopped
  • 1 Small Onion, chopped
  • 1 Red Pepper, chopped
  • 4 Garlic cloves, minced
  • 1 can fire roasted tomatoes
  • 1/2 tsp Red Pepper Flakes
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • Salt & Pepper to taste

  • 6 Bell Pepper, cut in 1/2

Directions:
  1. Preheat oven to 350*.
  2. Cook 1 cup quinoa in a pot with the 2 cups of water until fluffy and all the water is evaporated. Remove from the heat.
  3. In a large pan, heat the veggie broth. Add garlic, onion, red pepper and celery until they get a little soft.
  4. Add the spinach and spices and mix well until spinach is coated but not wilted.
  5. Cook for about 5-7 minutes, until all the veggies are semi-soft.
  6. Add the tomatoes and quinoa to the pan, mix well until combined.
  7. Wash and slice the peppers in 1/2. Place in a 10 inch baking dish.
  8. Fill each pepper with the quinoa mixture and bake for 40 minutes or until the peppers have browned edges and are soft.
  9. Remove from the oven, top with vegan cheese, cashew cream, guacamole or salsa or eat as is!
