One Pot Creamy Vegan Pasta

What I LOVE most about this recipe is that it is extremely SIMPLE!! ONE pot, a bunch of yummy ingredients and only takes about 30 minutes. It is super creamy from coconut milk and plant based mozzarella and it's pasta sooooo....don't really need to say much else right?

I use Jovial Foods for my GF noodles almost every time. They are just perfection. These penne noodles really fit this dish perfectly! Top this with some green onions and red pepper flakes and you've got a HUGE hit for the family! My boys LOVE this one!

INGREDIENTS:
  • 8 oz pasta of choice
  • ½  yellow onion, diced
  • 3 garlic cloves, diced
  • 2 cups veggie Broth
  • 1 (14 oz) can fire roasted diced tomatoes
  • ½ cup unsweetened plant based mylk
  • 1 tsp real salt
  • 1/2 tsp garlic pepper
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 2 cup Miyokos or Follow Your Heart Mozzarella vegan cheeze
  • Garnish: red pepper flakes and green onions

DIRECTIONS:
  1. Add about 1/4 cup water into your pan over medium heat & add onions and garlic. Cook for 5 minutes and then add all seasonings. Allow to cook for another 3 minutes.
  2. Add veggie broth, tomatoes, mylk, and pasta & bring mixture to a boil.
  3. Lower the heat and cover for 15 minutes
  4. If you use Miyokos cheese, break off chunks and add it in. Stir well to allow it to melt. If you use Follow Your Heart, just add it in and stir. 
  5. Garnish and serve!
