Baked Sweet Potatoes with Almond Butter and Bananas

This is a super comforting, warm and sweet breakfast that is FULL of healing foods. If you wanted you could use any other fruits with this! Or completely omit and just have a nice warm sweet potato! The world is yours! :)

Ingredients:
  • 2 sweet potatoes
  • 2 bananas
  • 1 Tbsp each Unsweetened almond butter (or any nut butter)
  • 1 Tbsp each maple syrup
  • Cinnamon for sprinkling


Directions:
*I use a pressure cooker*
  1. Place steamer basket into the Instant Pot and add the water.
  2. Wash the sweet potatoes well with a scrub and fruit spray.
  3. Place them onto the rack. Close the lid tightly.
  4. Set on “Steam” program and set time for 10 minutes. (YES 10 minutes!)
  5. When finished cooking, release the pressure until it has finished.
  6. Remove the lid and place on plates.
  7. Cut up the bananas and place one on each potato.
  8. Sprinkle with cinnamon as desired and drizzle the almond butter and maple syrup on top.
