Mixed Berry Cheesecake Bars

I spent some time today making these Mixed Berry Cheesecake Bars & they turned out so good I wanted to share the recipe. 🤙 They are free of: gluten, grains, eggs & refined sugar! 🤸‍♀️ You could totally make these dairy free as well, using vegan cream cheese, if that's your need.

CRUST :
  • 1 chia egg (1 Tbsp ground chia + 3 Tbsp water)
  • 3 Tbsp coconut sugar
  • 2 Tbsp butter, melted
  • 1 Tbsp honey
  • 1 1/2 cups almond flour
  • 1/2 cup tapioca flour
  • 1 Tbsp coconut flour
  • 1/4 tsp sea salt

CHEESECAKE :
  • One 8 oz package cream cheese, softened
  • 1/4 cup coconut sugar
  • 1 chia egg
  • 1 Tbsp tapioca flour
  • 2 tsp vanilla extract
  •  1 1/2 cups fresh berries (I used blueberry & blackberry)

CRUMBLE :
  • 1/2 cup almond flour
  • 2 Tbsp honey
  • 1 Tbsp butter, melted

DIRECTIONS:
  1. Preheat the oven to 350º and line a 9x9 inch baking dish with parchment paper. 
  2. In a large bowl, beat the chia egg, melted butter, honey and coconut sugar until combined.
  3. Add the almond flour, tapioca flour, coconut flour, and sea salt and mix on low until crumbly but doughy. It should press together between your fingers.
  4. Press the dough into the bottom of the lined dish. Bake for 12 minutes.
  5. In the same bowl, mix the cream cheese, chia egg, tapioca flour, vanilla and coconut sugar on medium until it is completely smooth.
  6. Spread cheese mixture into baked crust and smooth out.
  7. Evenly add on the berries, and then the crumble. To make crumble just add all ingredients to a small bowl & mix until a crumb topping forms.
  8. Put the dish back into to the oven, and bake for 350º for 30 minutes. It should be golden brown.
  9. Place on a rack at room temperature for about an hour before putting into to the fridge to chill. You want this cold!  You can also pop into the freezer for quicker chill time, that's what I did!
