Oil Free Istant Pot Refried Beans

Refried beans are one of my favorite beans! They are super easy to make and taste good in almost anything! I use them in tacos, burritos and nachos any day of the week. This version uses the Instant Pot so it is quick without the long soak needed. Enjoy!

Ingredients:
  • 1 cup pinto beans, rinsed
  • 3 cups filtered water
  • 1 medium onion
  • 1 Tbsp Real salt
  • Black pepper to taste
  • 1/4 cup veggie broth or water

Directions:
* I use a pressure cooker*
  1. Add beans & water to the instant pot.
  2. Cook on HIGH pressure for 40 minutes.
  3. Release the pressure.
  4. In a large pan, saute the onion, salt and the veggie broth or water until aromatic and translucent.
  5. Pour beans and 1/2 the cooking water into the pan and start mashing! *It may take some time to get the consistency right. I sometimes use a blender to get it nice and smooth. You would just pour beans and water into blender or food processor and blend until desired consistency.
  6. Add more of the cooking water if you like a runnier refried bean.
  7. Cook down until it has thickened. Add more salt if needed.
