Instant Pot Black Beans

Black beans are a great addition to anyone on a plant based diet. Full of protein and fiber they are a wonder filler at any meal! This method uses the Instant Pot so it only takes 40 minutes with NO soak time needed!

Ingredients:
  • 2 c dry black beans, rinsed
  • 1 onion, chopped
  • 2 Tbsp veggie broth
  • 4 cloves fresh garlic, minced
  • 2-3 tsp salt
  • 1 tsl black pepper
  • 4 c water or veggie broth


Directions:
  1. Set Instant Pot to saute and add veggie broth.
  2. Add onions and garlic and saute for a 2-3 minutes
  3. Add beans, liquid, pepper and salt.
  4. Secure the lid, turn vent knob to “sealed”.
  5. Set to High Pressure Manual for 40 minutes.
  6. When time is up, release the pressure.
  7. Remove the lid after all the steam is out. Adjust salt to taste.
  8. Eat as a side dish, tacos, taco salads, burritos or in any dish really!
