Herbal Broth

​It's been a long, busy, exhausting few months with all the holidays entails and for sometime like me with auto immune and everything else, my self care gets pushed aside a lot. Which is okay during times we are serving others and spending time with loved ones but now it's time to slow down. Today I'm making a big batch of Herbal Broth for all the ails and pains.  I hope you all find some peace & rest after all the craziness and even find time to care for yourself. 

Ingredients:
~ 3 lbs marrow bones or chicken feet/carcass
~ 2 red onions
~ 1 head of garlic, sliced in half
~ 3 carrots, roughly chopped
~ 8oz portobello mushrooms
~ 1 lemon, thinly sliced
~ 1 Tbsp peppercorns
~ small handful fresh thyme
~ small handful fresh rosemary
~ small handful fresh sage
~ 1/2 cup dried shiitake mushrooms
~ 1 small piece turmeric, sliced
~ 3 inch piece of ginger root, peeled & sliced
~ salt to taste
Optional: ~ 1/4 cup dried astragalus root, half jalapeno or other hot pepper

Directions:
1. Wash & cut the carrots into small chunks, halve the onions, slice the garlic bulb in half, slice mushrooms thin, wash & slice lemon, peel & slice ginger and turmeric.

2. Add all ingredients to a stock pot and cover with water. Cover, bring to a boil, slide lid half off, and simmer for at least 1 hour.

3. Remove from stove top, let cool, pour through a mesh strainer into a large bowl.

4. Transfer to glass containers and refrigerate for a few days or freeze in plastic container/ice cube trays for a few months.
