Grain Free Cinnamon Waffles

Oh waffles. I love you so much. Crispy, soft, sweet, but also perfectly flavored. Just yes please. These are FREE of grains, gluten, eggs, dairy, and refined sugar. They can also be made oil free! Top with maple syrup, nut butter, fruit or the wild blueberry compote at the bottom of the recipe! You don't have to miss out because you are trying to heal!

Ingredients:
  • 2 cups finely ground almond flour
  • 1 cup tapioca starch
  • 1 Tbsp + 1 tsp  baking powder (I use Hans potato starch)
  • 1 Tbsp cinnamon
  • 1 cup almond or coconut milk
  • 2 flax eggs ( 2 Tbsp flax meal + 6 Tbsp water)
  • 2 tsp. lemon juice
  • 1/4  cup maple syrup
  • 1 Tbsp. vanilla extract
  • 2 Tbsp coconut oil, melted*
*Note: can sub equal parts apple sauce for oil free!

Directions:
  1. In a small bowl whisk together flax meal and water & allow to firm up a bit.
  2. In a large bowl, combine almond flour, tapioca starch, cinnamon and baking powder.
  3. To the flax egg, add milk, lemon juice, maple syrup, vanilla and the melted coconut oil or apple sauce.
  4. Add to the dry ingredients and stir batter just until combined.
  5. Using a ¼ cup, pour batter onto preheated waffle iron and cook until light says ready and they are toasty brown.


Wild Blueberry compote:

Ingredients:
  • 2 cups of wild blueberries
  • 2 Tbsp maple syrup
  • 2 Tbsp chia seeds.

Directions:
  1. Add the blueberries, coconut oil and maple syrup to a sauce pan.
  2. Cook on medium heat until it has turned pretty soupy, about 15 minutes. Turn down to low and cook until it has thickened up a bit. About 15 more minutes. (You can use an immersion blender if desired to blend it up a bit.)
  3. Serve on top of the waffles!
  4. You can use this as regular jam as well!

I tried this today! I haven’t had waffles in years. I just haven’t found any waffles I liked or they weren’t vegan! This was incredible and 100% vegan. So happy about the outcome. Thank you.
