Grain Free Chocolate Chip Cookies

​Chocolate chips cookies that are free of gluten, grains, eggs, dairy and soy!? Yes! Right here and so yum! This recipe is actually the same as my cookie pie but just made into little delicious cookies. SO. GOOD.

Ingredients:
  • 4 cups blanched almond flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 2 tsp sea salt
  • 1/2 cup melted coconut oil
  • 2/3 cup pure maple syrup
  • 2 flax eggs (2 tbsp flax meal mixed with 6 tbsp water)
  • 2 tsp vanilla extract
  • 1 cup Enjoy life chocolate chips

Directions:
  1. Preheat oven to 350.
  2. In a small cup, mix the flax meal and water to create the gelatinous egg consistency. Set aside.
  3. In a large bowl, mix the almond flour, baking soda, cinnamon and salt until combined.
  4. In a separate bowl, combine melted coconut oil, maple syrup, flax eggs, and vanilla.
  5. Pour the wet ingredients into the dry and combine with a wooden spoon.
  6. Add chocolate chips.
  7. Scoop out a spoonful of cookie dough and put on a baking sheet. You will need to flatten these as they do not spread.
  8. Continue with the rest of the dough.
  9. Bake for about 7 minutes but watch as the bottoms will burn if you aren’t careful.
  10. Remove from the oven when they are a LIGHT golden brown color.
  11. Eat ’em up!
