Grain Free Cookie Pie

Oh you know...chocolate, warm cookie, pie, thick gooey center...no big deal right? HA! This dessert is everything. It is probably my family's favorite treat because it packs a punch with all the things a dessert should have! It is even better with some coconut milk ice cream on top! SO GOOD!


Ingredients:
  • 4 cups blanched almond flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp sea salt
  • 1/2 cup melted coconut oil
  • 2/3 cup pure maple syrup
  • 2 flax eggs (2 tbsp flax meal mixed with 6 tbsp water)
  • 2 tsp vanilla extract
  • 1 cup Enjoy life chocolate chips

Directions:
Preheat oven to 350.
  1. In a small cup, mix the flax meal and water to create the gelatinous egg consistency. Set aside.
  2. In a large bowl, mix the almond flour, baking soda, cinnamon and salt until combined.
  3. In a separate bowl, combine melted coconut oil, maple syrup, flax eggs, and vanilla.
  4. Pour the wet ingredients into the dry and combine with a wooden spoon.
  5. Add chocolate chips.
  6. Put batter into an oiled pie dish and level out with greased hands.
  7. Top with more chips if desired.
  8. Bake for 30-40 minutes, or until golden brown.
  9. If you check it with a knife, it will not come out clean. This is a thick cookie so it will be very gooey inside!!
