Grain Free Berry Cobbler

Ingredients:
  • 5 cups berries*
  • 2 Tbsp maple syrup
  • 1 Tbsp lemon juice
  • 1.5 cups almond flour
  • 1/4 cup coconut oil (at room temperature)
  • 1/2 cup maple syrup
  • 1 tsp. Cinnamon
  • *I used blackberries, blueberries, and raspberries but you can use any you want.


Directions:
Preheat oven to 375.
  1. In a mixing bowl add the berries, maple syrup  and lemon juice and mix well.
  2. In a large bowl, combine the almond flour, coconut oil, maple syrup and cinnamon. Use a fork to keep it lumpy, making sure all the flour is coated.
  3. Pour the berries into a 10 inch baking dish.
  4. Top with the crumble and bake for 30 minutes or until the topping is golden brown.

Would this work with frozen berries too?

Is it just regular almond flour or should I use blanched?

Hey Jennifer! Sorry for the late reply! You can use either kind but I personally use blanched, it is lighter and more ground, not as coarse. Hope that helps!
