Gluten Free Waffles

My kids LOVE waffles. And pancakes. And anything made with bread really. I try to make a variety of different foods for them so they never feel bored or that they miss out on anything! These waffles hit the spot for them and the entire batch was devoured by all 3 boys! I add frozen wild blueberries for an added health benefit and top with local maple syrup AND a wild blueberry compote! SO GOOD! And the even cooler part? These are OIL FREE! I'm really trying to cut back on added oils and was stoked I got these to work out well and they taste delicious! You can make without the blueberries and add a different fruit, chocolate chips, or any other addition you love! Mix it up and ENJOY!

INGREDIENTS:
  • 2 cups oat flour
  • 2 cups blanched almond flour
  • 2 tbsp tapioca flour
  • 1/2 tsp salt
  • 2 Tbsp baking powder
  • 1 Tbsp cinnamon
  • 3 Tbsp coconut sugar
  • 1 Tbsp flax meal
  • 3 cups almond milk, unsweetened
  • 1 tsp pure vanilla extract
  • 2 cups wild blueberries

DIRECTIONS:
  1. In a large bowl, mix together all of the dry ingredients.
  2. Add the almond milk and vanilla to the bowl and mix until just combined, don't overdo it.
  3. Heat waffle iron according to instructions. Once waffle iron is ready, cook the waffles according to the manufacturer instructions. It took me about 7 minutes for 1 waffle to be nice and browned.
  4. Remove and lay out on a cooling rack. I found this keeps them from getting soggy.
  5. Serve with any fruit like blueberries, chopped apples, sliced banana and chopped nuts or other toppings of your choosing. And a little pure maple syrup to finish it off!​

Wild Blueberry Compote:
  • 2 cups frozen wild blueberries
  • 1-2 Tbsp maple syrup
  • 1 Tbsp chia seeds

Directions:
  1. Add the blueberries, coconut oil and maple syrup to a sauce pan.
  2. Cook on medium heat until it has turned pretty soupy, about 15 minutes. Turn down to low and cook until it has thickened up a bit. About 15 more minutes. (You can use an immersion blender if desired to blend it up a bit.)
  3. Serve on top of the waffles!
  4. You can use this as regular jam as well!

I am allergic/sensitive to tapioca. Anything I can use to replace this?
