Gluten Free Vegan Biscuits & Gravy

So most mornings are fruit smoothies and feeling light. But sometimes you just want a good ol' plate of something salty and comforting! THIS is that. Biscuits and gravy is a staple in any diner or breakfast spot because it is the perfect combo of flavor and texture and is just THAT good. It might put to sleep when you're done eating, but hey nobody complains of a good nap after a good meal right?

This gravy can be made oil free if you need that and it tastes JUST AS GOOD! If you want to make your own butter, I also posted a recipe for that! It is SUPER SIMPLE too! Go HERE for that recipe!

If you do not like mushrooms you can sub them out for some vegan sausage instead!


INGREDIENTS:
  • 1 batch Gluten Free Cut Out Biscuits OR Gluten Free Rosemary Thyme Biscuits
GRAVY:
  • 1/4 cup vegan butter, olive oil or veggie broth for OIL FREE
  • 8 oz baby bella mushrooms, diced
  • 1/4 yellow onion, finely chopped
  • 2 clove garlic, minced
  • 1/4 cup GF flour OR 2 Tbsp tapioca or arrow root starch
  • 1/2 cup veggie broth
  • 1 1/3 cup unsweetened almond milk
  • 1 Tbsp dried rosemary
  • 1 tsp sea salt
  • 1/2 tsp freshly-cracked black pepper

DIRECTIONS:
  1. Make the biscuits of choice according to recipe directions.
  2. While the biscuits are in the oven, melt butter (or warm up broth) in a large saute pan over medium-high heat.  Add mushrooms and stir to coat.
  3. Saute the mushrooms for 5 minutes, stirring occasionally, until cooked down and softened. 
  4. Add in the onion and garlic, and cook for an additional 3 minutes, stirring frequently, until the onion is soft. Sprinkle the mixture with the flour, and stir to combine. (IF USING STARCH: in a small bowl add the starch and about 1/4 cup warm water and whisk until incorporated. Add into pot and stir well).
  5. Cook for another minute and stir in the veggie broth until well combined. Then add in the rest of the ingredients, and stir until everything is completely incorporated.
  6. Bring the sauce to a low simmer. Reduce heat to medium-low and continue simmering, stirring often, until the gravy reaches your desired thickness. Usually only takes about 3 minutes.
  7. Taste, and adjust the seasoning if needed. Remove from heat and pour the gravy ladled over the warm biscuits, topped with an additional sprinkle of black pepper.
