Energy Balls With Nut Mylk Pulp

So I've been making my own nut mylks; cashew, macadamia, and almond! I had ALL this pulp that I didn't know what to do with! I hated the thought of throwing it away and so I just froze it all. Until I had a suggestion to make little energy balls for snacks and BOOM! I tossed a bunch of stuff in a bowl and they came out delicious! I used macadamia pulp for this recipe but this would also work with any pulps! It would even work with almond flour. You can also use whatever butter your like. I used cashew but you can use sunflower seed, almond or peanut butter. Whatever floats your boat! Add any kind of goodies inside like chopped nuts, vegan m &m's, dried fruits, etc! These are very versatile!

INGREDIENTS:
  • 1 cup macadamia nut pulp
  • 1 cup GF rolled oats
  • 1 cup unsweetened coconut flakes
  • 3/4 cup unsweetened cashew butter
  • 1/2 cup agave/maple syrup or coconut nectar
  • 1 Tbsp cinnamon
  • 1 Tbsp alcohol free vanilla extract
  • pinch of salt
  • 1 cup vegan chocolate chips
  • 1 cup no sugar added raisins

DIRECTIONS:
  1. Add all the ingredients except the chocolate chips and raisins in a food processor and pulse until evenly combined.
  2. Transfer mixture to a bowl and add the chocolate chips and raisins. Stir until combined well.
  3. With your hands make small balls, about 2 Tbsp sized. If they stick to your hands, dampen your hands slightly. The water helps the dough not stick and easily roll.
  4. When all the balls are rolled, store in the fridge in an air tight container.

Excited to try this! Making my first batch of almond milk soon and was hoping to have something to do with the pulp! 👍🏻

Hey Nicole! I hope you love these! I have so much pulp and couldn't figure out what to do with it all! These really save the waste and my kids love them so they serve as a great snack! xoxo
