Cucumber Noodles with Tahini Sauce

Cucumber noodles are my JAM! They are super simple, hydrating, nourishing and pack a delicious crunch! I really love them with tahini sauces and this one is so beautifully spicy! You can add any toppings you wish like tomatoes, salsa, grated carrots or chopped peppers or just eat it as is! I hope you enjoy this bowl of goodness as much I do!
Ingredients:
Noodles:
  • 1 large English cucumber
  • handful of kalmata olives
  • 1/4 cup of fresh salsa
  • red pepper flakes (optional)
Lime Chipotle Tahini:
  • 2 Tbsp tahini
  • 1 lime, juiced
  • 1/2 tsp chipotle
  • 1/2 tsp garlic powder
  • 1/4 tsp dried parsley
  • 1/2 tsp maple syrup
  • pinch of salt
Directions:
  1. Spiralize the cucuber and chop the olives or whatever veggies you are going to use. Put into a bowl and set aside.
  2. Make the sauce: add all the ingredients into a small bowl and thin out with a small amount of water. You want it to be somewhat thick still so only add about 2-3 Tbsp.
  3. Pour over noodles & veggies and sprinkle with red pepper flakes!
