Cilantro Lime Cauliflower Rice

Cilantro and lime is one of the best flavor combos for mexican food there is! When you go grain free you may think you have to miss out on eating things like rice but that’s where cauliflower comes in! This Cilantro Lime CauliRice can be eaten cooked OR raw! Prepared the same, it gives so much flavor! You can eat it in wraps, tacos, as a side dish or just for a small meal by itself!

Ingredients:
  • 1 12oz bag pre riced cauliflower or 1 head of cauliflower*
  • 1/4 cup veggie broth
  • 3 clove garlic, minced
  • 1/4 cup cilantro, finely chopped
  • juice of 1 lime or 2 Tbsp
  • salt and pepper to taste
*If you are are making your own caulirice simply do THIS: wash and roughly chop the head of cauliflower. Add to a food processor or large blender. Pulse until it is riced and finely minced.

Directions:
  1. In a large pan, heat the broth and add the garlic. Cook for 1 minute and add the cauliflower.
  2. Cook for about 10-15 minutes, stirring frequently. When it is somewhat soft and has a little browning on it, add the salt, pepper and lime.
  3. Add in the chopped cilantro and mix well.
Serve in or next to tacos, burritos, wraps, as a side dish or with roasted veggies!
In the wraps below it was not cooked, it was actually raw! Same ingredients just not cooked.
