PB Power Balls

These little balls are amazing. They are quick to throw together, easy to eat with no mess, have energy sustaining oats and so delicious! You can do anything with this recipe too and switch things up to your taste! AND they are cheap to make!
Ingredients:
  • 1 1/4 cup dry gluten free organic oats
  • 1/2 cup nut butter (peanut, cashew, almond or sunflower seed)
  • 2 Tbsp chia seeds
  • 2 Tbsp flax meal
  • ¼ cup agave or maple syrup
  • ½ cup mini chocolate chips
  • 2 Tbsp dried fruit (raisin, cherries, blueberries)
  • 1 tsp vanilla extract
  • dash of salt

Directions:
  1. In a medium bowl, add all of the ingredients and stir to combine well. The mixture should be sticky.
  2. Refrigerate for at least 30 minutes. Rest time is important!
  3. Use a spoon to scoop about a tablespoon of the mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 balls.
  4. Store the balls covered in the fridge for up to a week.
Notes:Rest time is a everything.Do NOT skip the resting time. The oats will absorb some of the moisture and will help everything stick together. 30 minutes should be perfect.
If they are too dry…If they are too dry and won’t stick together after resting, try to add a tablespoon or two of something sticky like the more nut butter or liquid sweetener. It helped me use coconut oil on my hands to help roll them better.
Add what YOU love!Add any kind of add ins you like!
->A tablespoon of chia seeds, ground flaxseed, or hemp hearts. Dried fruits like blueberries, cranberries, dates or raisins. Play with it!
