Chia Pudding

Chia pudding is a great thing to have on hand for snack time or even breakfast! The toppings are ENDLESS! Use fruit, nuts, seeds, chocolate, coconut, anything! You can even layer this with a smoothie to add extra protein and omegas to your meal! 

Ingredients
:
  • 3 cups Unsweetened Almond or Coconut Milk
  • 2/3 cup Chia Seeds
  • 5-8 Tbsp Maple Syrup (to your taste)
  • 1 tsp Ground Cinnamon
  • Pinch of Salt
  • 2 tsp Vanilla Extract
  • (Optional- add 1/4 cup cocoa powder to make it chocolate!)

Directions:
  1. In a medium size bowl, mix the chia seeds and milk of choice with a whisk until incorporated well.
  2. Add the remaining ingredients and whisk until it is combined well and there are no more lumps. (If adding cocoa powder, you will need to whisk a little longer as it takes time to get the powder wet.)
  3. Pour into an air tight container or mason jars and put in the fridge to chill for at least 2 hours to overnight.
  4. Enjoy with your favorite toppings!

I try to use ingredients that are usually 95% organic (lessen that toxic load!), very little unrefined sugars used and the majority of these are GLUTEN FREE. We eat legumes, grains, nuts, seeds, grass fed organic meats, pasture raised eggs, very small amounts of organic dairy, and lots of fruits and veggies!
