Caramel Shortbread Bites

Basically this is a Twix bar but with all the good stuff. NO refined sugars, gluten, animal products, or soy. Just a bunch of simple ingredients that create this beautiful treat that everyone will love!​


Ingredients:

Crust:
  • 1 cup coconut flour
  • 1 cup almond flour
  • 1/4 cup Maple Syrup
  • 1/2 tsp vanilla extract
  • 1 Tbsp melted coconut oil or vegan butter
Caramel:
  • 10 dates
  • 1/2 cup peanut butter or other nut butter
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
Chocolate coating:
  • 9 oz bag of chocolate chips (I use Equal Exchange bittersweet)
  • 1 Tbsp coconut oil
OR use this for refined sugar free chocolate version:
  • 1/3 cup melted coconut oil
  • 1/4 cup cacao powder
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • pinch of salt

Directions:
  1. Mix together crust ingredients in a bowl. It should resemble a crumble. If too dry add a little more maple syrup. Now place it into a 8 or 9 inch lined pan and press evenly.
  2. For the caramel, add the dates, nut butter, vanilla and milk in a food processor and blend until a paste is formed.
  3. Spread the caramel on the crust evenly and put in the freezer for up to 3 hours to harden.
  4. Melt the chocolate and coconut oil in a double boiler method. I use a glass bowl over a pot of water on medium heat. For the refined free version just whisk all ingredients until smooth!
  5. Take the crust/caramel out of the freezer and carefully cut into bite sized pieces.
  6. I use a fork to hold the bites while I coat the chocolate, getting off any extra chocolate so it’s not too thick. You can also drizzle it. Put back into the freezer to set for 20 minutes.
  7. Store in an air tight container in the fridge or freezer.
