Buffalo Ranch Bites

 This is another version of cauliflower bites that have an added crunch and a dreamy ranch sauce on top! I make them as tacos but they can be eaten as is or on salads!
Ingredients:
  • 1 cup almond milk
  • 1 cup oat flour (can sub almond or chickpea flour for grain free)
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tablespoon olive oil (can omit for oil free)
  • 1 head of cauliflower
  • ⅔ cup chick pea crumbs (can also use panko bread crumbs)
  • 2/3 cup buffalo sauce, see note below
  • Ranch sauce, recipe below
Directions:
  1. Preheat oven to 450.
  2. Wash & chop cauliflower into bite sized pieces.
  3. Combine milk, flour, salt, spices and olive oil in a large bowl.
  4. Toss cauliflower bites into the bowl and coat evenly.
  5. Sprinkle with the chick pea crumbs and gently toss.
  6. Line a baking sheet with parchment paper and bake for 20 minutes.
  7. Remove from the oven and gently toss with buffalo sauce. You want the cauliflower coated but not soaking wet.
  8. Place back in the oven and bake an additional 10 minutes until cauliflower is tender but crispy.
  9. Remove from the oven and enjoy!
NOTE: you can make your own buffalo sauce by whisking together 2 Tbsp almond milk, 2 Tbsp olive oil and 2/3 cup Cholula or any kind of hot sauce.
Ranch Sauce:
  • 1.5 cup vegan mayo, I used soy free Veganaise
  • 1/4 cup almond milk unsweetened
  • 1.5 tsp apple cider vinegar or lemon juice
  • 1 tsp garlic powder
  • 1.5 tsp dill
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1/4 tsp pepper
Mix all ingredients together in a bowl. This can be stored  in a mason jar up to a week in the fridge.
