Broccoli Cheese Lasagna

Sometimes recipes come from days of thinking, researching, reading, waiting and figuring out lists I need. And sometimes they just....happen. That's what this was. I have been on a brown rice noodle kick this week. I had some lasagna noodles and a few veggies and wanted to try to create a lasagna but without the red sauce. Truth be told I'm not a HUGE fan of red sauce. So I decided to make my Vegan Cheese Sauce, chopped up some broccoli & spinach and this was the outcome! A comforting, cheesy, saucy concoction of plant based heaven. I topped mine with Cashew Parmesan and some dried herbs!

This recipe is :
--> GLUTEN FREE
--> OIL FREE
--> SOY FREE
--> SUGAR FREE
--> DAIRY FREE
--> PROCESSED VEGAN CHEESE FREE
--> 100% VEGAN!


ENJOOOOOOY!!

INGREDIENTS:
  • 1 package of GF brown rice lasagna noodles (I used OVEN READY)
  • Vegan Cheese Sauce - tripled!**
  • 3 cups broccoli florets, chopped
  • 4 cups spinach, chopped
  • 2 Tbsp dried basil, divided
  • Vegan Parmesan Cheeze
  • Dried parsley and dried basil to garnish

**If you do not triple the cheese sauce you may not have enough and the noodles will be dry & hard. It's always better to have more! You can also add more water to the sauce to extend the amount you have as well.

DIRECTIONS:
  1. Preheat oven to 400 degrees.
  2. Cook lasagna noodles if needed according to the package directions.
  3. Make the Vegan Cheese Sauce (TRIPLE THIS RECIPE!)  and the Cashew Parmesan.
  4. Using a 9 × 13 glass baking dish, spread a layer of vegan cheese sauce at the bottom of the dish.
  5. Arrange one layer of lasagna noodles, pour a generous amount of vegan cheese sauce, sprinkle with a big handful of spinach, a big handful or 2 of broccoli and another decent layer of sauce. Sprinkle some cashew parmesan & dried basil on top of the cheese sauce.
  6. Repeat the above step 3 times until you finish with the last layer of noodles. Pour some of the cheese sauce on top and spread out evenly. Reserve some (about a cup) for the end of baking.
  7. Seal the baking dish with foil or a baking sheet and bake in the oven at 400 for about 60 minutes until heated through and noodles are soft.
  8. Remove the cover, sprinkle with a cup of cashew parmesan and add the reserved vegan cheese sauce.
  9. Put back into the oven and bake for 10 more minutes.
  10. Remove and allow to cool slightly before serving.
  11. Enjoy!!
