Banana Oat Pancakes

If you are a plant based eater or just want something more clean and egg free, these are your go to pancakes! I have always had such a hard time finding an egg free pancake recipe WITHOUT banana and here they are! Made with oats & bananas OR applesauce, they are a delicious flavor, moist and fluffy all in one!
Ingredients:
  • 2 cups gluten free rolled oats
  • 1/2 cup plant based milk
  • 2 ripe bananas or 1 cup Applesauce
  • 2 tbsp baking powder
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup*
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
Directions:
  1. Combine all ingredients in a blender or food processor. Scrape sides, ensuring it blends well. Don’t over do it.
  2. Heat a pan over medium-high heat with a little cocount oil.
  3. Pour about 1/3 cup of batter into the pan. Spreado out into a circle as best as you can.
  4. Cook for 2-3 minutes on the first side until bubbles appear. Flip and cook for another 2-3 minutes. Remove from pan.
  5. Repeat until all the batter is gone.
  6. Top with fruit, hemp seeds, nut butter, honey or maple syrup. Enjoy!
Strawberry sauce:
1 cup fresh strawberries
1 Tbsp raw honey or maple syrup
1 Tbsp chia seeds
1 tsp lemon juice
Put all ingredients in a small pan and cook on medium heat until strawberries are softened. Remove from heat and pour into a blender or food processor. I leave a small hole open for the steam to escape since it is hot. Blend until it is smooth. Put back into the pan on the stove on medium low heat and allow to thicken a little more. Pour into pancakes!

Oops. Banana Oat Pancake Recipe mistake. The title and recipe says banana but the picture caption says applesauce. ("I have always had such a hard time finding an egg free pancake recipe WITHOUT banana and here they are! Made with oats and applesauce,")
