Banana Cinnamon Rolls

Ingredients:
  • 4 spotty bananas
  • 1 cup of dates
  • 1/2 cup of water (or almond milk for a more luscious paste)
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • cinnamon to sprinkle


Directions:
Preheat oven to 250.
  1. Slice bananas into 3 strips lengthwise.
  2. Lay the slices on two baking sheets lined with parchment paper. I did not have paper but had new pans so they did not stick.
  3. Bake for 1 hour.
  4. While the bananas bake, make the paste.
  5. Blend together all the ingredients in a food processor or blender.
  6. Remove the bananas from the oven and allow to cool for about 10 minutes.
  7. Gently using a butter knife, scrape under each banana and turn.
  8. Spread the date paste onto each banana slice, sprinkle with cinnamon and roll. If any pieces are short or broken just roll on the inside. It doesn’t have to be perfect. 
  9. Put all the rolls onto one pan and bake for another hour.
  10. Remove and allow to cool. Enjoy warm (how i like it!) or you can put in the refrigerator and eat cold!
