Almond Butter Blondies

Fudgy. Moist. Chocolatey. Vegan. Gluten free. Delicious!


Ingredients:
  • 1/2 cup unsweetened almond butter
  • 1 Tbsp coconut oil
  • 2 flax eggs
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 cup Bob’s Redmill GF flour
  • 1 tsp baking powder
  • 1 tsp almond extract
  • 1/2 cup unsweetened almond/coconut milk
  • 1 cup vegan chocolate chips
Directions:
  1. Preheat oven to 350. Line a 9×9 baking dish with parchment paper or use coconut oil.
  2. In a pot on the stove, add almond butter and coconut oil and combine.
  3. In a medium sized bowl add the almond butter/oil mixture, maple syrup, coconut sugar, almond extract, & flax eggs.
  4. Add in the coconut milk & mix well.
  5. Finally add in the baking powder and flour, combine well. I used a whisk to ensure it all mixed together smoothly.
  6. Fold in the chocolate chips and pour into the baking dish.
  7. Bake for 30-35 minutes or until a toothpick comes out clean and its nicely browned.
